In my 26 for 2026 is one of the things to do, to taste and try new things... for the month of may or any other month, depending where you are... ウニ, riccio di mare, erizo de mar, zee-egel of sea urchin

Shall I eat a sea urchin?

And it happened to be that I saw a recipe of see urchins. Sea urchins are eaten in many forms and many countries. In Japan (Hokkaido) the sea urchin is eaten raw. In the mediterranean kitchen sea urchins are mixed in sauces. In Norway, eating sea urchins at the turn of the year is an age-old tradition. When harvested properly it is rather environmental friendly and not bad to eat. 

Are sea urchins healthy?

Sea urchins are rich in protein, dietary fibre, minerals (zinc) and beta-carotene. They are also high in vitamins C and A, normally found in dark green leafy vegetables like kale and spinach. Like many oily fish such as salmon, sea urchins are high in omega-3 fatty acids. A sea urchin is pretty healthy to eat.

How do sea urchins taste?

The taste of sea urchins are big, creamy, sweet and buttery. The urchins are harvested by hand one by one. The costs are 12 pieces around 18 euro (NL).

How to prepare a sea urchin? 

Sea urchins are eaten straight from the shell. Raw and out of the sea urchins shell itself. Cut the sea urchin open with scissors and open the sea urchin and take out their inside and it is done. Or put them on the grill and smoke them. Or you can take the sea urchin out and put it in an omelette or mix it with a sauce. A sandwich sea urchin! You can buy a fresh sea urchin at the fish store.
