Recept: Mexicaanse rijst met bonen

Altijd handig om bij de hand te hebben voor een snel succes voor vrienden of vegetarische vrijdagen

    Ingrediënten

    • 4 eetl olie
    • 400 gram rijst, lange korrel
    • 1 ui gesnipperd
    • 1 groene paprika in stukjes
    • 1 theel gemalen komijn (djinten)
    • 1 theel koriander
    • 1-2 theel tabasco
    • zout
    • 8 1/2 dl bouillon
    • 450 gram rode kidneybonen uitgelekt en afgespoeld
    • 450 gram tomaten, grofgehakt
    • gehakte peterselie

    Bereiden

    • verhit de olie in een diepe braadpan
    • doe de rijst erin en bak deze tot hij iets doorzichtig wordt
    • voeg ui , paprika ,komijn en koriander toe
    • laat dit nog 2 minuten zachtjes bakken
    • doe tabasco ,zout , bouillon en bonen erbij en breng alles aan de kook
    • leg het deksel op de pan en laat de rijst zacht koken to hij gaar is en het vocht geabsorbeerd
    • haal de pan van het vuur en schep de tomaten erdoor
    • laat de pan gedurende 5 minuten afgedekt staan
    • maak met een vork de rijst los, bestrooi de rijst met peterselie
    • (geserveerd met tortilla's is dit een hoofdgerecht met vlees, gevogelte of met enchilada's is dit een bijgerecht)
